Cowboy Caviar




Ingredients:

1/2 Cup Canola Oil
1/2 Cup Apple Cider Vinegar
1/4 Cup Sugar
Stop Light Peppers (Red, Green, Yellow)
Red Onion
2 Tomatoes
4 Celery Stalks
Jalapeno Pepper
1 Can Rotel
1 Can Corn (drained)
1 Can Pinto Beans (drained)
1 Can Black Eyed Peas (drained)
Tortilla Chips

Boil Canola Oil, Apple Cider Vinegar, and Sugar and let cool

Dice Stop Light Peppers, Red Onion, Tomatoes, Celery, and Jalapeno pepper

Add Rotel, Corn, Beans, and Blackeyed Peas to diced veggie mix above. Mix Well. Pour Boiled Mixture Over Top and Refrigerate. Serve with Tortilla Chips. Enjoy!
