Sweet Creations Mini Loaf Pan Review #GoodCookBlogger

One thing I love to do and have always know how to do is cook. Baking is one of the things I do on a daily basis so I'm always playing around with a new recipe. I recently had the opportunity to review a Sweet Creations Mini Loaf Pan from Good Cook, and I was ecstatic! Of all the baking I have done over the years, I have never splurged on a good loaf pan so this was definitely going to be some fun! I decided I wanted to wait to use my pan until Thanksgiving. All of my guests are always a fan of my pumpkin bread/bars so I wanted to wrap them up a special batch to take home.



My recipe is pretty easy to make. Normally I would make them up in a cake pan, cut them into squares, and ice some of them later to turn them into the "Pumpkin Bars".  I encourage you to try this! I was never a fan of pumpkin until I started making this delicious recipe!

Ingredients for the Bars:


4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda


Icing:
8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract

Directions:

Preheat the oven to 350 degrees F.

Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. 


Let cool completely before frosting. Cut into bars.




To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.


We then grabbed our roll of twine and wrapped them up into cute little gifts for our guests!


I received many compliments on my bread and truly look forward to making many more loaves of bread in my loaf pan!
